Ingredients

  • 113 grams organic coconut oil or 1/2 cup
  • 127 grams organic raw honey or 1/4 cup plus 2 tablespoons
  • 142 grams organic pumpkin or heaping 1/2 cup
  • 298 grams organic wide flake coconut or 1 1/3 cups
  • 28 grams organic raw pumpkin seeds
  • 28 grams organic sesame seeds

Instructions

  • Preheat the oven to 325°F. Line a baking sheet with parchment paper.
  • In a small pot add the coconut oil, honey, and pumpkin. Putover low heat and melt until the honey and coconut oil are completely melted. Remove from heat and set aside.
  • In a large mixing bowl, add the rolled oats, coconut, pumpkin seeds, and sesame seeds.
  • Add the pumpkin mixture to the oat mixture and stir to combine completely.
  • Transfer the mixture to the prepared baking sheet and spread out evenly.
  • Bake for 20 minutes, stir to move the outside granola into the middle and the middle granola to the outside. Then bake again for 20minutes. Reduce the oven temperature to 250°F and leave the granola in the oven for another 5 to 10 minutes and bake until the granola looks golden brown and dry.
  • Allow to cool completely on the baking sheet.
  • Break up into clusters and store in an airtight container for up to 1 month.

Notes

Divide the extra pumpkin into 2 portions (5 ounces each) and put in a freezer safe container. Then you’ll just have to thaw one the next time you want to make this recipe.
